White Chocolate Popcorn Crunch Recipe

Looking for a quick and easy recipe you can make from the comfort of your dorm room with just a microwave? Want something you can make the day or night before so you don’t have to make it then ext day? Here’s a sweet and crunchy treat that is sure to get you through the day!

White Chocolate Popcorn Crunch

5 cups popped popcorn

1/2 cup dried sweetened cranberries

1/2 cup sliced almonds

12 ounces white chocolate baking chips

1 to 2 tablespoons vegetable shortening

1. Cover a baking sheet with wax paper and set aside. Place  popcorn, cranberries and almonds in a large bowl and set aside.

2. Melt chocolate in the microwave on 50-percent power for 1  minute. Stir chocolate. Microwave at 15-second intervals until chocolate is  melted to perfection, stirring between each heating. (Chocolate will not melt  without stirring.)

3. Pour chocolate over popcorn mixture, and stir to  coat.

4. Spread mixture onto waxed paper pan and let cool  completely. When chocolate is cooled and set, break into chunks for serving.  Store in an airtight container and enjoy it on your way to class!

You can also substitute the white chocolate chips for chocolate chips if you prefer that.

I know that when I have a long day of classes with minimal time for breaks, I must bring food with me if I don’t want to pass out in my classroom. “Forgetting” to eat or just eat poorly can be harmful to your immune system and health as a whole. On your busy and long days, always be sure to pack little (healthy) snacks (breakfast bars, fruit, protein drinks) with you in your backpack or purse to keep you going throughout the day!
